This course is hands-on. Each participant will leave have the opportunity to make their own products. This workshop is designed to provide an accessible way to assess students against NCEA Level 1 Technology Achievement Standard AS91082 Implement basic procedures to process a specified product (4 credits).
The course will cover:
- The selection and preparation of ingredients
- Methods and techniques
- Health & Safety
- Recipes and quantity calculation
- Trialling and testing
We start with some demonstrations before moving on to practical jam, curd or pickle-making. Participants will be able to create their own products to take away . We incorporate Health & Safety considerations. All ingredients and recipes are provided. We cover basic skills including equipment, ingredient preparation, mixing, testing and trialling techniques.
Teacher support includes assessment templates, suggestions for gathering evidence, scaffolding assessment, writing specifications, health and safety considerations and assessment and moderation best practice.
It is recommended that students have the opportunity to perfect their techniques through further practice after the workshop and before assessment takes place. However, if students meet the standard, it is possible to assess on the day.
For groups of up to 10, all materials are provided. The school needs to provide facilities and equipment appropriate for food preparation. Off-site workshops at an appropriate venue can also be organised – please contact us to discuss.
It may be necessary to purchase further materials for the separate assessment. Full information can be provided.
Cost $750 + GST (Includes materials for each participant)
Cost is per workshop based on a maximum attendance of 20 participants within the Auckland Super City region. Each workshop takes 2-3 hours.
